Produced from selected sheep's milk, this is a cheese aged in a careful curing process, to which we have added the noble virgin olive oil, to obtain an Alentejo cheese of intense flavor and superior quality. It has a firm consistency and a yellowish colour, and being preserved in olive oil, it prolongs its conservation, while at the same time acquiring the aroma of traditional Alentejo olive oil, for a new combination of flavours.It goes well with aged and full-bodied red wines.
